Serves 6 - 8
4 cups milk
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
A dash nutmeg
8 slices bread
Butter as needed
In a shallow bowl, whisk egg until foamy. Whisk in milk, vanilla, cinnamon, and nutmeg.
Heat butter in heavy skillet over medium-low heat. Dip 4 slices of bread in the egg mixture, turning to coat thoroughly. Let excess drip back into bowl.
Place coated bread slices in a hot skillet. Cook, turning, until both sides are nicely browned, about 2 minutes each side.
Repeat with remaining bread and egg mixture. To serve, sprinkle with cinnamon sugar, if desired.
Serve with maple syrup.

2 bell peppers, sliced
2 onion, chopped
10 tomatoes, chopped
5 cloves garlic chopped
4 tbs oil
Salt and pepper
In a frying pan, heat oil. Fry the onion for 2 minutes, until pink and translucent. Then add the garlic and bell peppers.
Continue to cook until the the onion and bell peppers have softened. Now add the tomatoes, salt and pepper. Mix well.
Break the eggs, one at a time directly into the frying pan, leaving some gap in between the eggs. Cover it with the lid and cook on a low heat till the eggs are cooked but a bit soft to the touch.
Serve hot with bread.
