Peanut Butter and Chocolate Chip Cookies!

My brother has been asking me to bake cookies for weeks now. Every day I get a text saying 'Dude, cookies'. When I bake for pleasure, I can't be rushed. I usually need to be inspired or a craving is involved. I woke up this morning and looked outside my window at the beautiful rain and decided it was the perfect day for some comforting peanut butter cookies.
I reached my kitchen and the beautiful rain was not so pretty anymore. My staff was late, the road leading to the kitchen was full of water and it was time to tweak all my recipes to suit the weather! Well, even more reason to make these indulgent bites of goodness.

Voila, here is the recipe. Perfect for a day like today :)

Peanut Butter and Chocolate Chip Cookies
(recipe adapted from Shirley O. Corriher's EZ Peanut Butter Cookies)
Note: This recipe is gluten free!

Makes 20

Ingredients

-250 g Crunchy peanut butter
-150 g Brown Sugar
- 1 egg
- 90 g Dark Chocolate Chips (I use Callebaut 53.8%)





Method.
Pre-heat your oven to 165 degrees c.
In a bowl whisk the egg, sugar and peanut butter till well combined.
Fold in the chocolate chips.










Use a tablespoon to drop the cookies on a lined baking tray (use a silpat if available, or spray baking paper with nonstick cooking spray).
Make sure the cookies are at least one inch apart. Use a fork to press them down.









Bake at 165 degrees for 10 minutes, remove from the oven and transfer to a cooling rack.
Eat.Enjoy.Repeat.
